Here is the latest recipe from Berlingske MS. This time I was experimenting with the many different citrus fruits and at the same time we had a visit in the kitchen from Greenland and he had brought us some Musk Ox tongues – so I decided to combine the flavours and ended up with “Musk ox tongue with lumpfish roe and citrus fruits”.
I have tried to put citrus fruits together so they each contribute the best they can. When we succeed in balancing the various acidic units, you get a fantastic, but not specific citrus flavor – Lots of acidity and protein!
