Recently we shared with you some of the photos from the seaweed book – these were also used in Coco – 10 World-Leading Masters choose 100 Contemporary Chefs, a cookbook and survey of the most significant chefs working today. Rene Redzepi – Noma selected 10 chefs… so did Ferran Adria – El Bulli, Mario Batali, Shannon Bennet – Vue de monde, Alain Ducasse – Le Louis XV, Fergus Henderson, Yoshiro Murata – Kikunoi, Gordon Ramsay, Alice Waters & Jacky Yu – Xi Yan.
