“fermentation for adults!” – Thomas, who is also half Iranian, hails from Svendborg, Denmark. He credits his passion for food and honouring guests with hospitality to his mother. Thomas has a decorated history within the Copenhagen gastronomic landscape, working at Kokkeriet and Kong Hans Kælder before coming to Mielcke & Hurtigkarl. No detail goes unnoticed under Thomas’ watchful care and it’s no wonder Thomas’ precision has also extended to wine, as a holder of the Wine and Spirits Educational Trust Level 3 (WSET3) & Court of Master Sommeliers (Certified). Thomas is a highly passionate kombucha brewer and our juice menu is also in his dedicated hands.
