Jose, our larger-than-life sommelier, brings his Portuguese warmth to our team. Born originally in Angola, he came to Denmark in the 80s where he began working with Roy Hurtigkarl, Jan Hurtigkarl’s father, at restaurant Gastronomique. Jose knows more than anyone else about the gastronomic heritage between these walls.
Jose is a character; dedicated and passionate about his profession. He is known for his intuitive and informed touch when curating the accompanying wines for our menus. Unafraid, surprising, and innovative, Jose blends new and classic lines to create a true experience for the knowing and unknowing wine aficionado.
