“fermentation for adults!” – Born in Svendborg, Denmark in 1989 and has Iranian descent. Dedicates his food and passion to his mother. Moved to Copenhagen in 2013 and has worked at Kokkeriet and Kong Hans Kælder before coming to Mielcke & Hurtigkarl. Thomas is highly perfectionistic and cares for our space and guests with the utmost attention to detail. He has completed Wine and Spirits Educational Trust Level 3 (WSET3) & Court of Master Sommeliers (Certified). Even more so, Thomas is a highly passionate kombucha brewer and our juice menu is also in his dedicated hands!
